Expressions of Interest: Licence and Operation of Crofters Cottage Café – Centennial Parklands

Summary
Council is excited to invite submissions from qualified and experienced applicants for the licence and operation of Crofters Cottage Café, located within the vibrant Centennial Parklands, Watsons Drive, Glen Innes. Since opening in 2001, Crofters Cottage has been a popular cultural hub, offering a unique blend of Celtic-inspired events, food, and local products, alongside café classics.

Housed in a charming replica “taigh-dubh” or “black house,” Crofters Cottage features a fully equipped commercial kitchen, seating for approximately 30 people indoors, and an outdoor area with space for 16-20 more. The successful applicant will have the exciting opportunity to create a welcoming environment, bringing fresh ideas to life while maintaining the café’s beloved atmosphere. The applicant will be responsible for providing furniture and any additional kitchen fit-out.

Council's preference is for a food business, such as a coffee shop, restaurant, or cafeteria. Other uses may be considered on merit.


Applicants are required to:

  • Meet food safety standards
  • Maintain public liability insurance
  • Comply with all conditions and specifications outlined in the licence agreement
  • Demonstrate experience in managing a similar business
  • Present a sustainable business model

In addition to Crofters Cottage, Centennial Parklands is home to:

  • The Australian Standing Stones
  • The Australian Celtic Festival
  • The Glen Innes Weekly Park Run
  • The Glen Innes Highlands Skywalk
  • Centennial Parklands’ New Amenities, Playground, and Outdoor Area
